Quick and Easy Vegan Chili.
A chili is an easy and hearty meal that is perfect for Fall. Here is a recipe for a quick and easy vegan chili using our Chiltomate sauce.

Servings: 3-4
Cook Time: 15 minutes

Ingredients:

  1. GOOD FOOD FOR GOOD Chiltomate fresh sauce – 1 jar (250ml)
  2. Cooking oil – 1 tsp
  3. Black turtle beans (cooked) – 1.5 cups
  4. Chopped onion – 1/4 cup
  5. Chopped squash – 1 cup. Substitute squash with sweet potato or vegetable(s) of your choice
  6. Water – 1/2 cup
  7. Salt – 1 dash or to taste
  8. Optional: Cilantro, lime and avocado for garnishing

Steps:

  1. Add oil to a stock pot, when it gets warm sweat the onions for 1 minute
  2. Add the squash (or other vegetables) and stir fry with onions for 1 minute
  3. Add 1/8 cup water, cover the pan and cook the vegetables for 5 minutes on medium
  4. Add the beans, Chiltomate sauce, 1 cup water and cook covered on medium for 5 minutes
  5. Take the lid off and cook open on high for 3 minutes or until desired consistency has reached
  6. Taste and adjust the seasoning if needed
  7. Serve warm and garnish with cilantro, lime and avocado
