“Pulled” Mushroom Tacos
1 jar (250 ml) GOOD FOOD FOR GOOD Chile de Arbol Sauce for Tacos
1 cup Chopped onion
1 cup Black beans – cooked and rinsed
200 g Enoki mushrooms – washed and roots chopped (separate the mushrooms)
1 tbsp Olive oil
8 Corn tortillas
(Optional) Chopped cilantro, guacamole, candy cane beets or scallions
- Sauté onions in a nonstick pan with some oil till they start sweating (~3 minutes).
- Add mushrooms and 1/2 jar of sauce and cook for 4 minutes.
- Warm corn tortillas till they are pliable (read package instruction) and keep aside wrapped in a foil.
- Assemble tacos with your favorite garnishes and a layer of “pulled” mushrooms
