TM_lentil sloppyjoe


I am making these exotic sloppy joes for Meatless Monday meal today. It feels like spring here after frigid cold last week. To honour the warm weather, I made these super easy and delicious Sloppy Joes. This American classic is made exotic and meatless, yet really high in protein. Serves – 4


2 cups cooked brown lentils (canned or dry cooked but not mushy)

1 jar of Good Food For Good vegan Tikka Masala sauce

½ cup chopped onions

1/8 cup chopped cilantro

½ cup Purple cabbage thinly sliced

½ cup green cabbage thinly sliced

½ cup Mango thinly sliced

1 tbsp lemon juice

8 whole wheat buns

1 tbsp oil


  • Sweat the onions in a pan with oil.
  • Add Lentils and all the sauce. Let it cook for 10 minutes till lentils have absorbed most of the sauce. Adjust salt if needed
  • While the lentils are cooking prepare the slaw by mixing, cabbage, mango, cilantro and lemon juice together.
  • To assemble the Sloppy Joe, spoon a good serving of the lentil mixture on the bottom half of the bun. Top it up with the slaw and cover it up with the top half.

Chef’s Tip: Feel free to add any vegetables that  you have handy in the lentil mix.
