This is the easiest Vegan Coconut curry lentil soup that you can make.
With a handful of ingredients this delicious warming soup is ready in under 20 minutes. I love enjoying this warming soup on cool winter nights with a warm baguette. It is a balanced soup with protein, vegetables and fat that is as satisfying for the taste buds as it is for the hungry belly.
Serves: 4 (makes 1litre soup)
1 Jar Good Food For Good Coconut Curry sauce (250ml)
1/2 Cup red lentils (soaked for 20 minutes and rinsed)
1 Cup chopped carrots
1 Tbsp Ginger finely chopped
1 tsp salt
3 cups of Water
- Add all the ingredients to a soup pot and bring it to a boil
- Cover the pot and reduce heat to medium low and cook for 15 minutes
- Blend with a hand blender and serve
Chef’s Tip: Feel free to substitute carrots with squash or sweet potato.
