Chickpeas and Sweet Potato in Coconut Curry

Coconut Curry with Chickpeas, Kale & Sweet Potato



Serves: 2


  1. 1 jar of Good Food For Good Coconut Curry sauce
  2. 2 tsp coconut oil
  3. 1 ½ cup cooked chickpeas
  4. 1 cup chopped sweet potato
  5. 1 cup chopped kale
  6. 1 cup water
  7. salt to taste
  8. 1 tbsp chopped cilantro to garnish (optional)


  1. Warm oil in a sauce pan, and sauté Sweet potato till brown on the edges.
  2. Add kale and stir fry a bit for about 1 minute.
  3. Add chickpeas, Good Food For Good Coconut Curry sauce and 1 cup of water.
  4. Cook uncovered for 10 minutes on medium heat.
  5. Add salt to taste and garnish with cilantro.
