Easy Vegan Minestrone Soup

If you love spicy, you have to try this easy plant-based Minestrone soup. Loaded with vegetables and your favourite pasta. Handful of ingredients and 15 minutes thats all thats needed to make this delicious warming soup.



  • 1 jar Good Food For Good Spicy Bolognese sauce
  • 1 Tbsp Olive oil
  • 1 cup chopped onion
  • 2 cups shell pasta
  • 2 cups chopped carrot
  • 2 cup chopped celery
  • 2 cups cooked kidney beans
  • 2 cups baby spinach
  • 8 cups water
  • 1 Tsp Salt (add more if needed)
  • Basil or parsley to garnish



  1. In a sauce pan heat 1 Tbsp olive oil
  2. Add onion and sauté till sweating
  3. Add all other ingredients except garnish and spinach
  4. Cook for 15 minutes or till Pasta is tender
  5. Add spinach and garnish
  6. Let sit for 5 minutes and serve.
