If you love spicy, you have to try this easy plant-based Minestrone soup. Loaded with vegetables and your favourite pasta. Handful of ingredients and 15 minutes thats all thats needed to make this delicious warming soup.
Ingredients:
- 1 jar Good Food For Good Spicy Bolognese sauce
- 1 Tbsp Olive oil
- 1 cup chopped onion
- 2 cups shell pasta
- 2 cups chopped carrot
- 2 cup chopped celery
- 2 cups cooked kidney beans
- 2 cups baby spinach
- 8 cups water
- 1 Tsp Salt (add more if needed)
- Basil or parsley to garnish
Method:
- In a sauce pan heat 1 Tbsp olive oil
- Add onion and sauté till sweating
- Add all other ingredients except garnish and spinach
- Cook for 15 minutes or till Pasta is tender
- Add spinach and garnish
- Let sit for 5 minutes and serve.
